Easy Caramel Popcorn: Family TV Night
I know its something so little, but it was so much fun. You know that feeling you got when you were eight and did something you knew you weren't supposed to do, but knew you were going to get away with it, so you could enjoy it, guilt free? That's what it felt like. Like eating stolen Halloween candy under the covers in the middle of the night. We were giddy.
We made caramel popcorn, got into our jammies and cuddled on the sofa. Well, at least three of us did. Scarlett spent half the time crawling around in circles, chasing the poor dog (who just wanted to curl up at Shawn's feet). Nevin had the time of his life - apparently he's never seen popcorn pop before, so you can just imagine.

Orville Redenbacher's Quick and Easy Caramel Corn
1 bag microwave popcorn, popped
3/4 cup margarine
3/4 cup brown sugar
1. Preheat oven to 350°F. Line 15x10-inch cookie sheet with parchment paper.
2. Prepare popcorn according to package directions. Remove all unpopped kernels. Place popped corn in extra-large bowl.
3. Combine margarine and brown sugar in medium saucepan over medium-high heat. Bring to boil; boil for three minutes, stirring occasionally. Remove from heat. Drizzle over popped corn; using two spatulas, carefully toss to evenly coat. Spread out on prepared cookie sheet .
4. Bake 10 minutes, stirring halfway through baking, to evenly distribute caramel. Toss again after baking. Let cool 5 minutes on baking sheet. Store leftovers in airtight container. *Watch it very carefully - it goes from perfect to burned in less than a minute!
