The Ultimate Summer Supper

Tonight, we had THE BEST summer supper.  It was light, easy, and delicious.  We had chicken caesar salads, bread, pink lemonade and strawberry pie with whip cream.  Yum.
Don't tell me this doesn't look delicious!

The pie is super easy, and the pastry I used for it does not involve rolling - its more of a cross between pastry and shortbread.  Read on below for the recipes.

As a totally unrelated side-note-my-evening-was-great story, my two-year-old is hilarious.  Tonight before bath, Shawn said, "Can you say, 'For shizzle?'"  Nevin, unprompted, said "Fo shizzle," crossed his arms across his chest, and then said, "Wooooord."

Easy Pie Pastry
1 1/2 cups four
2 tsp white sugar
1/2 tsp salt
1/2 cup oil
3 tsp milk

Mix the dry ingredients together, then mix in the wet ingredients.  Put in your pie plate and press around into a pie shell.  Bake at 400 degrees until golden brown.

Strawberry Pie
1 cup white sugar
Dash of salt
6 tsp corn starch
1 cup water

1) Cook until clear (I do it in the microwave for about 4 minutes - stir two or three times).
2) Stir in 4 Tbsp strawberry Jell-O.
3) Cool; add 1 quart strawberries.
4) Put in baked pie shell and place in the fridge to set.
